What's on the Menu: February 27-March 4

Where does the time go? It seems like just yesterday it was New Year's Eve and now it's already March.
This weekend I'm taking a field trip to Fayetteville to see the college girls and enjoy Alpha Delta Pi's Mom's Weekend. Tomorrow I finally get to try the world-famous Chicken Finger Friday at the house for lunch - I'm kind of excited!
But, before I left I got my menu for next week planned so that when I come back on Sunday I can head to the store and get cooking! What made the cut?
Cod (if I can find it) - either in Creamy Roasted Red Pepper Sauce or Simple Sicilian Cod -Sunday
Leftovers - Monday
Slow Cooker Pork Roast with Apples, Carrots and Rosemary - Tuesday
Leftovers - Wednesday
Pasta e Fagioli Soup - Thursday
Pork Tenderloins - Friday
As usual, something on that menu will change, of that I'm sure! I've also got a whole chicken in my freezer, chicken thighs, ground beef and the makings of pizza pinwheels, so we'll see how the main menus come out this week.
For sides I'm making Coleslaw, Parmesan Spinach Couscous, Brussels Sprouts, White Rice, Mashed Potatoes (instant) and even some Mac and Cheese to throw together for a side dish.
