What's for Dinner Tonight? College Edition:

Spinach Lasagna Roll-Ups

 

Those college girls, they're at it again. In addition to studying, going to classes, getting accepted into nursing school (go, Paige!) and other college mayhem, okay, maybe not so much of the mayhem, they threw together a really easy, great dinner for tonight! Doesn't this look delicious?

 

 

 

Who doesn't love lasagna? Anyone? Didn't think so. Who doesn't love the work that goes into preparing lasagna and all of the clean up? Everyone? That's what I thought. Include me in that list. It's one reason why I don't do lasagna more often in my house. That and the boy's aversion to cheese. But I digress.

 

This recipe is so much easier that traditional lasgna, somewhat healthy and gets on the table in about 30 minutes.

 

Start with 2 cups of finely chopped baby spinach, 1 cup low-fat cottage cheese, 2/3 cup shredded cheese, the girls used mozzarella, 1/3 cup grated Parmesan, 2 minced garlic cloves and salt and pepper. Add all of these to a bowl and mix.

 

 

Divide the mixture evenly between 8 cooked lasagna noodles and spread out over the entire noodle. Roll the noodles up and place in a lightly greased 9x9 baking dish, standing on end and touching. Pour 1 cup of prepared spaghetti sauce over the noodles and bake for 20 to 25 minutes.

 

 The results are lasagna goodness without all of the lasagna mess.

 

The recipe makes 4 2-roll servings and cost the girls about $10 total to make. To get more bang for your buck, double the recipe and freeze half for a quick last-minute, don't know what to make for dinner meal. The girls served these with Garlic Knots that I'll post next and caesar salads with almonds, croutons and Parmesan.

Ingredients:

  • 8 lasagna noodles

  • 2 cups finely chopped baby spinach, from abouot 3 ounces

  • 1 cup low-fat cottage cheese

  • 2/3 cup shredded cheese, such as mozzarella, Romano, or a blend, divided

  • 1/3 cup grated Parmesan cheese

  • 2 garlic cloves, finely minced

  • 1/2 teaspoon salt

  • Freshly ground black pepper

  • 1 cup spaghetti sauce

 

Directions:

  1. Preheat the oven to 350F. Lightly grease a 9x9 baking dish.

  2. Cook the lasagna noodles in plenty of salted boiling wather according to package directions. Remove when they are al dente and lay out on a clean towel to dry and cool.

  3. Mix the spinach, cottage cheese, 1/3 cup shredded cheese, Parmesan cheese, garlic, salt, and a generous quantity of black pepper.
