On the Tailgate Menu: Copycat Chipotle Pico de Gallo and Corn Salsa

I love Mexican food. I love Chipotle. So when I found two recipes that were supposed to be copycats of their pico de gallo and corn salsa, I was all over them like white on rice.
These are both really easy to make and kind of no-brainers when you think about the ingredients in them. I've made them several times at home already and my family loves them!

Ingredients:
3-4 Tomatoes, diced
1/2 Red Onion, diced
1/4 Jalapeno, diced
5-7 stems of Cilantro
Juice of 1 lime
1/4 tsp Kosher Salt
Instructions:
Chop the cilantro finely and add to chopped onion, tomato and jalapeno.
Gently stir in the salt and squeeze juice of lime over the top.
Stir until incorporated but careful not to smash the tomatoes.
Place in fridge for about an hour to marinade the ingredients together.

Ingredients:
1 12-ounce bag of frozen sweet yellow corn, defrosted and drained
2 medium-sized jalapenos, seeded and chopped (leave in some seeds for more heat if desired)
1/2 red onion, finely chopped (about 1/3 cup)
3/4 cup fresh cilantro, torn or chopped
the juice of 2 limes
1/2 teaspoon salt
1/2 teaspoon pepper
Directions:
Combine all ingredients in a bowl and mix.
Season with additional salt and pepper if desired.
Add more cilantro, jalapeno or lime according to your tastes!
