To top off the yummy seafood that I'm going to cook tomorrow I've got two choices, one of them being this Mango Black Bean Salsa that I threw together.
I made this as soon t0day so that the flavors will have plenty of time to mix together and taste heavenly!
Mango Black Bean Salsa:
Ingredients:
2 Mangos, diced
1/2 cup black beans, rinsed and drained
1/4 cup cilantro, chopped
1/4 cup onion
1/2 red pepper, diced
1 jalapeno, diced (remove the seeds and membrane if you don't want it too spicy)
Cumin to taste
Salt to taste
Pepper to taste
Directions:
Mix all ingredients together in a small bowl and toss.
Chill and serve.
